Owner of Knoche's Old Fashioned Butcher Shop: 'I’ve been here since, you know, since I was eight years old stocking shelves for Grandpa.'

After eight decades and three generations of cheerful service, Knoche’s Old Fashioned Butcher Shop in Madison is closing its doors for good on Oct. 15.

Owner Steve Knoche recently announced he has sold the shop at 5372 Old Middleton Road to local Chinese restaurant Taigu and is looking forward to what comes next.

“I’ve been here since, you know, since I was eight years old stocking shelves for Grandpa,” Knoche told Channel3000.com. “So I’m going to turn 69 this month. So it’s been a long run, you know, and 55 years full-time.”

For the last 25-years, Knoche and his wife have owned the eatery started by Steve’s grandfather, who passed the business down to his son, who in turn eventually passed the business down to his son, Steve. While Steve has two grown children, neither of them is interested in taking over the business.

Customers from everywhere are now flooding the establishment, stocking up on Knoche’s legendary ground beef and prime steaks. The store also operates a wholesale arm of the business, supplying meat to nearly 65 restaurants and bars, many of whom Knoche is now working with to find new suppliers.

Anyone with a store gift card is strongly advised to use it before the doors close for good on October 15.
